Chinese Mitten Crab cooked to perfection

This restaurant is AMAZING!!! We go there every single time we get back to HK- it has the yummiest Yum Cha, one of the best Chinese cuisines and a pretty good location for a bit of star spotting.

On that particular day (the only time I actually remembered to take any pics) we had yum cha plus “Chinese mitten crab”. Every year in autumn, it’s the “Chinese Mitten Crab” season in HK. These Hairy Crab doesn’t have a lot of meat, but they have the yummiest crab roe (some other blogs called it “yolk”). 

Apparently if you like hard roe, choose the female crab, but if you like soft roe (a bit like coddled egg), then you’ve gotta choose the male crabs. This time I have the male crab.

Our waiter expertly opened the crab up for us, removing all the gills and intestine while a hungrily looked on. He also put it back together into a perfect crab form before presenting it back to us for consumption.
Look at the roe! *Slobber* I haven’t had these crabs for at least 8 yrs and it was just absolutely perfect.
We had really nice fish with creamy herb sauce, XO sauce with rice noodle rolls, BBQ Pork Bun and many many other dim sums… but oh the crabsssss… really need to go back to HK now.
